Buttermilk Herb Fried Chicken

Ingredients:

  • Coating Ingredients:
    • 1/2  cup all-purpose flour
    •    1  Tablespoon chopped fresh parsley
    •    1  Tablespoon fresh thyme leaves
    •    1  teaspoon salt
    • 1/2  teaspoon garlic powder
    • 1/4  teaspoon pepper
  • Chicken Ingredients:
    •    1  package (20-ounce) boneless skinless chicken breast halves
    • 1/3  cup buttermilk*
    • 1/3  cup butter

Directions:

  1. To make the coating, in a 9-inch pie pan combine flour, parsley, thyme, salt, garlic powder, and pepper.

  2. Dip chicken in buttermilk, then in coating mixture.

  3. Melt butter in 12-inch skillet until sizzling and add chicken.

  4. Cook over medium-high heat for 20 to 25 minutes, turning occasionally, until chicken is golden brown and fork tender.

*Substitute 1 teaspoon vinegar or lemon juice plus enough milk to equal 1/3 cup. Let stand 5 minutes.

Alan's Kitchen Tip
If chicken breasts are too thick, pound them to 1/2-inch thickness using a meat mallet.
