Chicken and Peppers

Cooking Time: 12 min.

Ingredients:

  •       2  Tablespoons butter
  •       1  pound boneless skinless chicken breasts, cut into 3x1/2-inch strips
  • 2 1/2  teaspoons fajita seasoning
  •    1/4  teaspoon salt
  •    1/2  package (16-ounce) frozen pepper stir-fry vegetable combination
  •       1  cup frozen whole kernel corn
  •       1  Tablespoon chopped fresh cilantro
  •           Tortillas, warmed, if desired
  •           Sour cream, if desired

Directions:

  1. Melt butter in 12-inch skillet until sizzling; add chicken, fajita seasoning and salt.

  2. Cook over medium heat for 5 to 6 minutes, stirring occasionally, until chicken is no longer pink.

  3. Stir in frozen peppers and corn.

  4. Continue cooking for 5 to 6 minutes, stirring occasionally, until chicken is fork tender and peppers are crisply tender.

  5. Stir in cilantro.

  6. Serve with warm tortillas and sour cream, if desired.
