Chicken Breasts with Tomato Basil Cream

- 2 Tablespoons butter
- 2 teaspoons finely chopped
- 1/4 teaspoon salt
- 1/4 teaspoon coarse ground pepper
- 4 (6-ounce) boneless
skinless chicken breasts
- 1 cup coarsely chopped
red, yellow and/or orange tomatoes
- 1/4 cup coarsely chopped fresh basil
- 1/2 cup whipping cream
- Fresh basil leaves,
In a 10-inch skillet, melt butter until
sizzling; stir in garlic, salt and pepper. Add chicken breasts.
Cook over medium-high heat for8 to 12 minutes,
turning once, until golden brown.
Add tomatoes, 1/4 cup basil and whipping
Continue cooking for 4 to 5 minutes, stirring
occasionally, until sauce is heated through.
Serve with pasta and garnish with basil
leaves, if desired.
