Chicken Campanelle

Cooking Time: 20 min.
Total Time: 35 min.

Ingredients:

  • 2 to 3 - Tablespoon olive oil
  • 4 - boneless chicken breasts, cut into bit-size pieces
  • 1 - red onion, sliced
  • 1 - green bell pepper, sliced
  • 1 - red bell pepper, sliced
  • 1 - clove garlic, minced
  • Salt and pepper to taste
  • 3/4 - cup chicken broth
  • 1/8 - teaspoon lemon juice
  • 1/4 - cup white wine or chicken broth
  • 1 - package (8-oz.) cream cheese, softened
  • 1 - teaspoon spicy mustard
  • 1 - package (8-oz.) campanelle pasta, cooked

Directions:

  1. Heat oil in a skillet, and add chicken and onion. Stir and cook until chicken is no longer pink. Stir in bell peppers and garlic. Heat for 4 minutes.

  2. Sprinkle with salt and pepper to taste. Add chicken broth, lemon juice and wine or additional broth.

  3. Reduce heat to medium. Bring to a boil. Add cream cheese and mustard. Stir and reduce heat, cover and simmer for about 10 minutes. Stir in cooked pasta.

Kitchen Tips: Substitute rotini or penne pasta for campanelle pasta.
