Pearl River Shrimp Bisque

Ingredients

Directions

  1. Into a large pot, add butter, celery, mushrooms, onion, carrot, marjoram, mace, pepper and salt.  
  2. Saute for 10 minutes.
  3. Add the chicken broth and cook an additional 5 minutes.  
  4. Put ingredients through a sieve.  Return to strained items to the pot.
  5. Add chopped shrimp and simmer 1 minute.  
  6. Stir in cream and sherry.  
  7. Heat and serve.

Picnicking & Tailgating:

Make a day or two ahead.  Heat (on stove or in microwave) before leaving.  Pour into a thermal container and serve when you reach your destination.
