Pearl River Shrimp Bisque
Makes 4 servings.

Ingredients

4 – tablespoons butter

1 – stalk celery, chopped

2 – large mushrooms, chopped

1/2 - onion, chopped

1/2 - carrot, chopped

1/8 – teaspoon marjoram

1/8 – teaspoon mace

1/2 - teaspoon freshly ground pepper

1/2 - teaspoon salt

1 – cup chicken broth

1 – cup cooked shrimp, finely chopped

1 – cup heavy cream

2 – teaspoons dry sherry

Directions
  • Into a large pot, add butter, celery, mushrooms, onion, carrot, marjoram, mace, pepper and salt.  
  • Sauté for 10 minutes.
  • Add the chicken broth and cook an additional 5 minutes.  
  • Put ingredients through a sieve.  Return to strained items to the pot.
  • Add chopped shrimp and simmer 1 minute.  
  • Stir in cream and sherry.  
  • Heat and serve.

Picnicking & Tailgating:

Make a day or two ahead.  Heat (on stove or in microwave) before leaving.  Pour into a thermal container and serve when you reach your destination.
