Cast-Iron Skillet Breaded
Pork Chops
Makes 4 servings
Prep Time: 15 min.
Cooking Time: 4 to 6 min.
Ingredients:
- 4 – center-cut (1/2-inch
thick) pork loin chops
- 3 – Tablespoons oil or
fat
- 1/2 – cup flour
- 1 – Tablespoon salt
- 3/4 – cup water or
chicken stock
Directions:
- Wash and pat dry the pork
chops.
- Preheat a large cast-iron
skillet over medium-high heat for 3 minutes. Add the oil
or fat to the skillet.
- Using a gallon-sized
sealable bag, combine the flour and salt.
- Slide the pork chops into
the bag, seal, and tumble, rolling the bag until the
chops are covered with flour.
- Take the chops from the
bag and shake off excess flour.
- Place chops into hot
skillet.
- Cook for 2 or 3 minutes
and turn. Cook for another 2 or 3 minutes.
- You want the chops with
clear juice and meat feels firm. (If you use a
thermometer, it should read 150° F.)
