Cast-Iron Skillet Breaded Pork Chops

Prep Time: 15 min.
Cooking Time: 4 to 6 min.

Ingredients:

  • 4 – center-cut (1/2-inch thick) pork loin chops
  • 3 – Tablespoons oil or fat
  • 1/2 – cup flour
  • 1 – Tablespoon salt
  • 3/4 – cup water or chicken stock

Directions:

  1. Wash and pat dry the pork chops.
  2. Preheat a large cast-iron skillet over medium-high heat for 3 minutes. Add the oil or fat to the skillet.
  3. Using a gallon-sized sealable bag, combine the flour and salt.
  4. Slide the pork chops into the bag, seal, and tumble, rolling the bag until the chops are covered with flour.
  5. Take the chops from the bag and shake off excess flour.
  6. Place chops into hot skillet.
  7. Cook for 2 or 3 minutes and turn. Cook for another 2 or 3 minutes.  
  8. You want the chops with clear juice and meat feels firm.  (If you use a thermometer, it should read 150° F.)
