Jalapeno Cinnamon-Pineapple Pork
Makes 4 servings.
If you are looking for a way to spice things up,
this recipe is just the ticket.

Cooking Time: 15 min.
1 - pound pork tenderloin, cut crosswise into 8 pieces
1/4 - teaspoon salt
2 - Tablespoon margarine
1 - medium red bell pepper, cut into julienne strips
1 - can (8 ounces) pineapple chunks in unsweetened pineapple juice,
undrained
1/2 - cup dry white wine
1 - Tablespoon fresh ginger, finely chopped
1 - Tablespoon jalapeno pepper, finely chopped
1/8 - teaspoon cinnamon
1 - Tablespoon fresh cilantro, chopped
Press each tenderloin slice to 1-inch thickness; sprinkle with
salt.

In large skillet over medium heat, add
1-tablespoon margarine and melt.

Next, add the pork tenderloin and
for cook 3 to 4 minutes per side or until done (internal temp
155°F).

Place on serving plate and keep warm.
- To skillet, add remaining 1-tablespoon margarine and red bell
pepper.
- You want to cook for about 3 minutes or until crisp-tender.

Reduce heat to low.
- Next, stir in your pineapple and juice, wine,
ginger, jalapeno pepper and cinnamon.
- Simmer until you reduce the
liquid to about 1/4 cup.
- Spoon pineapple mixture over tenderloin;
sprinkle with cilantro.

microwave) before leaving. Pour into a thermal container and serve
when you reach your destination.
