Pineapple Glazed Pork Chops

Ingredients:

  • 1 - Tablespoon margarine

  • 4 - pork loin chops, 3/4 to 1-inch thick

  • 1 - clove garlic, minced

  • 1 - can (8 ounces) crushed pineapple, undrained

  • 1/2 - cup apple jelly

  • 1/4 - teaspoon ground cinnamon

  • 1/4 - teaspoon ground ginger

  • 1 - Tablespoon water

  • 1 - teaspoon cornstarch

Directions:

  1. In large skillet, add margarine. Put in chops with garlic and brown. Take chops from skillet and spoon off fat.
  2. Put in pineapple, jelly, cinnamon and ginger to skillet. Cook, over medium heat, until jelly melts.
  3. Put back chops to skillet and spoon sauce over chops. Decrease heat to low. 

  4. Cover and cook for 10 minutes or until chops are no longer pink. Remove chops to serving dish and keep warm.

  5. Beat together water and cornstarch and add to skillet. Cool stirring, until thickened. Spoon sauce over chops.

Picnicking & Tailgating

Make a day or two ahead.  Heat (on stove or in microwave) before leaving.  Pour into a thermal container and serve when you reach your destination.
