Pineapple Glazed Pork Chops
Makes 4 servings.

Ingredients

1 - Tablespoon margarine

4 - pork loin chops, 3/4 to 1-inch thick

1 - clove garlic, minced

1 - can (8 ounces) crushed pineapple, undrained

1/2 - cup apple jelly

1/4 - teaspoon ground cinnamon

1/4 - teaspoon ground ginger

1 - Tablespoon water

1 - teaspoon cornstarch

Directions

  • In large skillet, add margarine. Put in chops with garlic and brown. Take chops from skillet and spoon off fat.
  • Put in pineapple, jelly, cinnamon and ginger to skillet. Cook, over medium heat, until jelly melts.
  • Put back chops to skillet and spoon sauce over chops. Decrease heat to low. 

  • Cover and cook for 10 minutes or until chops are no longer pink. Remove chops to serving dish and keep warm.

  • Beat together water and cornstarch and add to skillet. Cool stirring, until thickened. Spoon sauce over chops.

Picnicking & Tailgating

Make a day or two ahead.  Heat (on stove or in microwave) before leaving.  Pour into a thermal container and serve when you reach your destination.
