Calico Chicken with Penne
Makes

Cooking Time: 19 min.
Ingredients:
- 8 - ounces (2-1/3 cups) uncooked dried
penne pasta
- 1 - Tablespoon butter
- 8 - ounces boneless skinless chicken
breast strips
- 1 - small (1 cup) green bell pepper,
cut into thin strips
- 1 - small onion, sliced
- 1/2 - cup Heavy Whipping Cream
- 1/4 - pound thick sliced deli ham or
smoked turkey, cut into strips
- 1/4 - cup freshly grated Parmesan
cheese
- 6 - Roma tomatoes, thinly sliced
- 1/2 - teaspoon salt Freshly ground
pepper
Directions:
Cook pasta according to package
directions. Drain and keep warm.
- In a 12-inch skillet, melt butter
until sizzling and add chicken strips.
- Cook over medium-high heat for 5 to 7
minutes, stirring occasionally, or until chicken is no longer pink.
- Add green pepper and onion.
- Cover and continue cooking for 5 to 7
minutes or until vegetables are crisply tender.
- Add cooked pasta, whipping cream and
ham.
- Cover and continue cooking for 3 to 5
minutes or until heated through.
- Stir in cheese, tomatoes, salt and
pepper.
