Mescal Mountain
Chicken
Makes 4 servings
Prep Time: 20 min.
Baking Time: 40 min.
Ingredients:

1 - teaspoon salt

1 - teaspoon pepper
-
1/8 - teaspoon thyme
-
1/8 - teaspoon mace
-
3 - pounds fryer chicken, cut up

1 - cup all-purpose flour

1/2 - cup olive oil
-
1 - onion, chopped
-
1 - clove garlic, minced
-
1-1/2 - teaspoon chili powder
-
1/2 - cup chicken broth
-
1 - cup dry white wine
Directions:
Preheat oven to 350 degrees.
- In a small mixing bowl, add together the salt, pepper,
thyme, and mace and mix.
- Sprinkle spices over the chicken. Dredge in flour and brown
on all sides in the oil using a heavy skillet. Move to a
casserole dish.
- Into a skillet, add the onion, garlic, and chili powder and
sauté for 5 minutes.
- Stir in the broth and wine, cook 5 minutes longer, and pour
over the chicken.
- Bake in the oven for 40 minutes or until tender.
