Chicken with Fried Rice
Makes 4 servings.

2 - fresh boneless, skinless chicken breasts
2 - teaspoons vegetable oil
1/2 - cup sliced green onions
1/4 - cup red bell pepper, chopped
1 - garlic clove, crushed
1/2 - teaspoon ground ginger
1/2 - cup Egg Beaters® Healthy Real Egg Substitute
3 - cups cold cooked regular long grain rice
2 - Tablespoons reduced-sodium soy sauce
Cut chicken into 1/2-inch strips.
- In large nonstick skillet or wok to medium-high
heat, add oil and heat.
- Sauté chicken for 3 to 4 minutes or until done
(internal temp 170°F).
- Remove your chicken from skillet.
In same skillet, sauté onion and pepper for 1 to 2
minutes or until crisp-tender.
Add garlic and ginger; sauté 30 seconds
Stir in rice and soy sauce.
Reduce your heat to medium.

- Return chicken to skillet and cook just until heated through.
