Curried Turkey with Jasmine
Rice
Makes 4 servings.

Cooking Time: 10 min.
Ingredients
3 - Tablespoons olive oil
1 - large onion, thinly sliced
1 - clove garlic, minced
1/2 - cup celery, chopped
3 - Tablespoons all-purpose flour
1 - Tablespoon curry powder
1/2 - teaspoon ground turmeric
1/8 - teaspoon ground cloves
1-1/2 - cups chicken broth
3 - cups cooked turkey, chopped
1 - large tart (Granny Smith) apple, peeled, cored and chopped
1/2 - cup raisins, chopped
1 - teaspoon grated lemon peel
1 - Tablespoon lemon juice
Crushed red peppers (to taste)
3 - cans hot cooked jasmine rice
Shredded coconut (to taste)
Directions

In 3-quart sauté pan,
add oil and heat.

Next, add the onion,
garlic and celery.

Sauté until
softened.

Then add your flour,
curry powder, turmeric and cloves and stir with wire whisk.

Cook for 1 minute.
- Gradually whisk in chicken broth and
continue cooking until mixture thickens stirring constantly.
- Add turkey, apple, raisins, lemon rind
and juice and red pepper flakes and season with salt.
- Stir well and cook for 5 to 7 minutes or
until hot and bubbly.
- Serve over a bed of hot cooked jasmine
rice and sprinkle with coconut.
