Curried
Turkey Breast
Makes 4 servings.
Ingredients

tablespoons butter

- onions, sliced

slices turkey breast (1/2-inch thick)

- teaspoons curry powder

cup yogurt
1
- tablespoon tomato puree
1

clove garlic, chopped
1/2

teaspoon powdered ginger

cup water

teaspoon salt

teaspoon cayenne pepper
Directions
- In a frying pan at
moderate heat, sauté onions in butter until golden.
- Push the onions aside and add the turkey.
- Sauté both sides until golden brown.
- Add the curry, yogurt, and tomato puree.
- Mix and cook for 10 minutes or until mixture starts to get dry.
- Add the garlic,
ginger, water, salt, and cayenne.
- Slowly
cook until sauce is thick.
Picnicking &
Tailgating:
This dish can
be made up a day or two ahead. Just
before leaving home, warm in microwave and keep in warm thermal containers. Just open at the picnic or tailgate site and serve over rice.
