Topanga Healthy Heart Chicken Breast
Makes 2 or 3 servings.

Ingredients

2 - tablespoons olive oil

4 - chicken breast, halved, skinned and boned

1 - teaspoon "Salt-Free" Salt

2 - tablespoons lemon juice

2 - tablespoons parsley

Directions
  • In a skillet, heat the oil over moderate to high heat.  

  • Place in the chicken breast and season with "Salt-Free" Salt.  

  • Sauté the chicken for about 4 minutes on each side.  

  • Add the lemon juice, and stir. 

  • Turn the chicken in the sauce, and then add the parsley.

Picnicking & Tailgating:

This can be made ahead of time.  Just before leaving the house, heat on top or stove or in microwave and place in a thermal container.  When you are ready to eat, it should be still nice and hot.
