Italian Spiced Meatloaf

Baking Time: 55 min.
Standing Time: 10 min.

Ingredients:

  •    2  pounds meatloaf mixture
  •    1  cup dry bread crumbs
  • 3/4  cup chunky spaghetti or pasta sauce
  •    1  medium (1/2 cup) onion, finely chopped
  •    1  small (1/2 cup) green bell pepper, finely chopped
  •    1  egg, slightly beaten
  •    2  Tablespoons chopped fresh parsley*
  •    2  teaspoons Italian seasoning**
  •    1  teaspoon salt
  •    1  teaspoon finely chopped fresh garlic
  • 1/4  teaspoon pepper
  •    2  ounces (1/2 cup) Mozzarella Cheese, shredded

Directions:

Preheat oven to 350-degrees F.

  1. In a large bowl, combine meatloaf mixture, bread crumbs, spaghetti or pasta sauce, onion, green bell pepper, eggs, parley, Italian seasoning, salt, garlic, and pepper.

  2. Form mixture into 11x5-inch loaf.  Place into ungreased 11x7-inch baking dish.

  3. Bake for 50 to 55 minutes until cooked through and browned.

  4. Sprinkle cheese over loaf. Continue baking for 5 to 10 minutes or until cheese is melted.

  5. Let stand 10 minutes before cutting.

*Substitute 2 teaspoons dried parsley flakes.

**Substitute 1/2 teaspoon each dried basil leaves, dried marjoram leaves and oregano leaves and 1/4 teaspoon rubbed sage.
