Fried Egg Mac and Cheese

Total Time: 20 min.

Ingredients:

  • 2 - packages (7-1/4 oz. each) Macaroni & Cheese Dinner
  • 1 - red bell pepper, chopped
  • 1/2 - cup chopped onions
  • 6 - eggs
  • 1/4 - teaspoon black pepper

Directions:

  1. PREPARE Dinners in large saucepan as directed on package.  Meanwhile, cook vegetables in skillet sprayed with cooking spray on medium heat 5 min. or until crisp-tender, stirring frequently.

  2. STIR cooked vegetables into mac and cheese; cover to keep warm.

  3. COOK eggs sunnyside up. Spoon mac and cheese onto 6 plates; top with eggs. Sprinkle with black pepper.

  • Serve with your favorite hot steamed vegetable.

Variation

  • Substitute 1 cup frozen peas for the chopped red peppers and 3 chopped green onions for the 1/2 cup chopped onions.

How to Cook Eggs Sunny Side Up

  • Heat large skillet sprayed with cooking spray on medium heat.  Break eggs into skillet; cook 4 min. or until whites are set and yolks start to thicken around edges.
