Baked Bean Soup

Makes 8 servingsNew England Home Cooking

Prep Time: 15 min
Cooking Time: 30 min + 10 min

Ingredients:

  • 3 - cups cold baked beans

  • 6 - cups cold water

  • 2 - slices onion

  • 2 - stalks celery

  • 1-1/2 - cups canned tomatoes, chopped

  • 1 - Tablespoon chili sauce

  • 1/2 - teaspoon salt

  • 1/2 - teaspoon pepper

  • 2 - Tablespoons butter

  • 2 - Tablespoons flour

Directions:

  1. In a saucepan put the beans, water, onions, and celery.  Bring ingredients to a boil and simmer 30 minutes.

  2. Add tomatoes, chili sauce, and seasonings.  In a skillet, make a roux with the flour and the butter.

  3. Then add to soup to thicken.  Simmer soup 10 minutes and serve.

Picnicking & Tailgating

Heat (on stove or in microwave) and pour into a thermos.  When you get to the picnic or tailgate site, just pour and enjoy.
