Aunt Betty's Bran Muffins

Makes 12 muffinsPennsylvania Dutch Cooking from AlansKitchen.com

Prep Time: 15 min
Baking Time: 20 min

Ingredients:

  • 1      cup bran

  • 1/2   cup whole wheat flour

  • 1/2   cup wheat germ

  • 1/2   cup sunflower seeds (optional)

  • 1      cup raisins

  • 3      teaspoons baking powder

  • 1      egg, well beaten

  • 1      cup milk

  • 1/2   cup oil

  • 2      Tablespoons molasses

  • 1      teaspoon vanilla

Directions:

Preheat oven to 350 F. and grease muffin pan.

  1. In a large bowl, combine, bran, whole wheat four, wheat germ, sunflower seeds, raisins, and baking powder. 

  2. In a medium bowl, combine egg, milk, oil, molasses, and vanilla.  Pour milk mixture over dry ingredients, mixing only till moistened.

  3. Fill muffin pan about 3/4 full.  Bake for 20 minutes.
