Honey Bread

Makes 6 loavesPennsylvania Dutch Cooking from AlansKitchen.com

Ingredients:

  • 2 1/2 - cups boiling water

  • 2 - cups quick oatmeal

  • 3 - packages yeast

  • 3 - cups warm water

  • 1 - cup honey

  • 4 - eggs, beaten

  • 2 - Tablespoons salt

  • 1 - Tablespoon shortening

  • 14 - cups flour

Directions.

  1. Add boiling water to oatmeal, set aside until lukewarm.  Mix yeast and water.

  2. Add honey, eggs, salt and shortening to oatmeal mixture then add yeast mixture and flour.  Knead well, let rise, knead again and form into loaves.

  3. Place loaves in greased bread pans.  Place in 325 F. oven and bake for 50 minutes.
