Lancaster Wheat Oatmeal Bread

Makes 3 or 4 loavesPennsylvania Dutch Cooking from AlansKitchen.com

Ingredients:

  • 3 - Tablespoons yeast, soaked in 1 - cup warm water

  • 3 - cups warm water

  • 4 - teaspoons salt

  • 1 - Tablespoon lecithin

  • 2/3 - cup cane molasses

  • 2 - cups wheat flour

  • 8 - cups flour

  • 2 - cups rolled oats

  • 2/3 - cup shortening or cooking oil

Directions.

  1. In a large bowl, to soaked yeast, add 3 - cups warm water, salt, lecithin, and molasses.

  2. Add flours and oats.  Knead dough and add shortening.  Let rise until double.

  3. Work down and shape loaves.  Let rise in pans and bake at 300 F. for 25 to 30 minutes.
