Pennsylvania Dutch Cooking from AlansKitchen.comMakes 4 cakes.

Ingredients:

  • 1 - package active dry yeast

  • 1/2 - cup lukewarm water

  • 2 - Tablespoons sugar

  • 2 - Tablespoons butter

  • 1/2 - teaspoon salt

  • 2 - Tablespoons all-purpose flour, sifted

  • 2 - eggs, beaten

  • 4 - cups bread flour (plus), sifted

  • 2 - cups milk

Directions:

Preheat oven to 350 F.

  1. In a small glass, combine the yeast, 1/2 cup of lukewarm water, and a 1/2 Tablespoon sugar.  In mixing bowl, mix the remaining sugar, butter, salt, and 2 tablespoons flour.  Next, add the yeast mixture and mix.  Set aside (in warm place) and let rise 1 hour.  Add the eggs, 2-1/2 cups bread flour.  Cover with plastic wrap and let rise 1 hour. 

  2. Finally, add the remaining flour and milk.  Attach bowl and dough hook.  Turn to Speed 2 and mix until smooth.  Continue until dough clings to hook and cleans sides of bowl, about 2 minutes.  Knead on Speed 2 for 2 minutes longer.

  3. On a floured board, roll out dough into 4 1-inch cakes.  Place in pie tins and brush with melted butter.  Let rise until double in side.  Place in oven and bake 20 minutes.
