Ebbelkuche (Apple Cake)

Pennsylvania Dutch Cooking from AlansKitchen.comIngredients

  • 1 - package active dry yeast
  • 1 - Tablespoon sugar
  • 1 - cup milk, scalded and cooled
  • 3-1/2 - cups all-purpose flour, sifted
  • 1/4 - cup butter
  • 1/2 - cup sugar
  • 2 - eggs, beaten
  • 1/4 - teaspoon salt
  • 4 - Granny Smith (cooking) apples, cut in eighths
  • Cinnamon Sugar
    • 3 - Tablespoons sugar
    • 1 - teaspoon cinnamon

Directions

Preheat oven to 350 F.

  1. In a mixing bowl, dissolve the years and tablespoon sugar in the lukewarm milk.  Add half the flour to make a sponge. 

  2. Beat until smooth. Cover and set aside for 30 minutes.  In another bowl, cream 1/2-cup sugar with butter. 

  3. Add to the dough mixture and then add the eggs.  Next, add the remaining flour to the dough mixture, along with the salt. 

  4. Remove dough from bowl and lightly knead on a floured board.  Return to a greased bowl and let rise 2 hours.

  5. Roll out on a floured board to 1/2-inch thick dough.  Place dough in greased cake pan. 

  6. Brush melted butter over dough and sprinkle a quarter o the cinnamon sugar.  Add the apples to the pan. 

  7. Sprinkle remaining cinnamon sugar over the top.  Set aside and let rise 30 minutes.

  8. Cover with aluminum foil and bake 20 minutes.  Remove aluminum foil after 10 minutes and continue to bake.
