Buckwheat Cakes II

Pennsylvania Dutch Cooking from AlansKitchen.com Makes 24 cakes

Ingredients:

  • 1 - teaspoon baking soda
  • 2 - cups buttermilk
  • 1 - Tablespoon molasses
  • 1 - teaspoon salt
  • 2 - cups buckwheat flour, sifted
  • 1 - egg, beaten

Directions:

  1. In a large bowl, mix the baking soda with buttermilk.  Add the molasses. 

  2. Sift in the salt and flour, and add egg.  Set aside for a few minutes, then stir well, adding more flour if needed. 

  3. The batter should be thin.  Pour batter on greased hot griddle and cook until golden brown.  Turn once.
