Buckwheat Cakes III

Pennsylvania Dutch Cooking from AlansKitchen.com Makes 40 cakes

Ingredients:

  • 1 - package active dry yeast
  • 1/4 - cup water, lukewarm
  • 1 - teaspoon sugar
  • 3 - cups buckwheat flour
  • 1 - cup milk
  • 1 - teaspoon salt
  • 2 - Tablespoons molasses
  • 1 - cup water
  • 1 - cup milk

Directions:

  1. In a small bowl, combine the yeast, 1/4-cup water and sugar.  Allow to foam.  In a large bowl, sift in the flour, milk, and yeast mixture.

  2. Let stand overnight.  In the morning, add the salt, molasses, and water.

  3. Thin batter with milk and use as much of the cup you need to make the batter thin.  Pour batter on greased hot griddle and cook until golden brown.   Turn once.
