Crumb Griddle Cakes

Pennsylvania Dutch Cooking from AlansKitchen.comMakes 30 cakes

Ingredients:

  • 1/2 - cup bread crumbs

  • 2 - cups buttermilk

  • 2 - eggs (separate whites and yolks)

  • 1 - teaspoon baking soda

  • 1/8 - cup water

  • 2 - teaspoons butter, melted

  • 1/2 - cup cornmeal

Directions:

  1. The night before, soak the bread crumbs in 1 cup buttermilk. 
  2. In the morning, add the well-beaten egg yolks, baking soda, water, butter, and remaining buttermilk. 
  3. Add cornmeal to make a smooth batter. 
  4. Finally, stir in whipped egg whites.
  5. Pour batter on greased hot griddle and cook until golden brown. 
  6. Turn once.
