Flannel Cakes I

Pennsylvania Dutch Cooking from AlansKitchen.comMakes 35 to 40 cakes.

Ingredients

  • 1 - cup milk, scalded
  • 2 - Tablespoons butter
  • 1 - cup milk, cold
  • 2 - egg yolks, beaten
  • 1 - package yeast
  • 1/4 - cup water, lukewarm
  • 4 - cups all-purpose flour, sifted
  • 1/2 - teaspoon salt
  • 2 - egg whites, beaten

Directions

  1. In a small bowl, combine the yeast, water and 1 tablespoon sugar. 
  2. Allow to foam. 
  3. In mixing bowl, add the scalded milk and butter. 
  4. Stir in the egg yolks, beaten. 
  5. Pour in yeast mixture. 
  6. Sift in the flour and salt. 
  7. Cover with plastic wrap, place in warm spot and let rise overnight. 
  8. In the morning, fold in the egg whites.
  9. Pour batter on greased hot griddle and cook until golden brown. 
  10. Turn once.
