Griddle Muffins

Pennsylvania Dutch Cooking from AlansKitchen.com Makes 12 cakes

Ingredients:

  • 2 - cups all-purpose flour, sifted

  • 4 - teaspoons baking powder

  • 2-1/2 - teaspoons sugar

  • 1/2 - teaspoon salt

  • 1/4 - cup butter, softened

  • 2 - eggs, beaten

  • 1/2 - cup milk

Directions:

Preheat oven to 400 F. and grease baking sheet.  Or use greased hot griddle.

  1. In a bowl, sift flour twice and then sift the flour, baking, sugar, and salt together.  Cut in the butter, and add the eggs and milk.  Mix well.

  2. On floured board, roll out dough 3/4-inch thickness.  Cut in rounds, brush with milk and sprinkle with a little sugar. 

  3. Place on baking sheet and bake for 15 minutes, or on top of stove on greased griddle, bake slowly as to avoid burning.  Turn once.
