Biscuit III

Makes about 4 dozen biscuits. Pennsylvania Dutch Cooking from AlansKitchen.com

Ingredients:

  • 5 - cups all-purpose flour, sifted
  • 3/4 - teaspoon baking soda
  • 3/4 - teaspoon cream of tartar
  • 1-1/2 - cups sugar
  • 3/4 - cup butter, melted
  • 3 - egg yolks, beaten
  • 3 - egg whites, beaten

Directions:

Preheat oven to 450 F. and grease baking sheet.

  1. Into a mixing bowl, sift 4 cup flour with baking soda and cream of tartar.  In a large mixing bowl, whip butter and sugar into a creamy texture. 

  2. Add in the egg yolks.  Sift in the flour, beating the mixture together to make very stiff dough. 

  3. If you need the fifth cup, add at this time.  Fold in the egg whites. 

  4. Set aside to rise for 60 minutes.  On a floured board, roll out dough to 3/4-inch thickness. 

  5. Cut out with floured biscuit cutter or drinking glass and place on baking sheets.   Bake for 12 to 15 minutes or until golden brown.
