Blitzkeuchen (Lightning Cake)

Makes 1 cake pan.Pennsylvania Dutch Cooking from AlansKitchen.com

Ingredients:

  • 4 - Tablespoons butter
  • 1 - cup powdered sugar
  • 2 - egg yolks, beaten
  • 1-1/4 - cups flour
  • 1-1/2 - teaspoons baking powder
  • 1/4 - teaspoon salt
  • 2 - egg whites, whipped
  • 1/2 - cup milk
  • 1 - teaspoon vanilla
  • 1/2 - cup sugar
  • 1 - Tablespoon cinnamon
  • 1/2 - cup walnuts, chopped

Directions:

Preheat oven to 325 F.  Grease and flour 9 x 12-inch pan.

  1. In a small bowl, whip together the butter and sugar to a creamy consistency.  Mix in the egg yolks. In a large mixing bowl, sift together the flour, baking powder and salt.  Gradually mix in the creamy butter-sugar mixture. 

  2. Alternate with the milk.  Then add the vanilla.   Next, fold in the egg whites.  Pour batter into pan. 

  3. In a small bowl, mix the sugar and cinnamon.  Sprinkle sugar-cinnamon mixture over the batter and sprinkle the walnuts.  Bake in oven for 40 minutes.  Cut into squares.
