Brown Bread

Makes 1 Loaf.Pennsylvania Dutch Cooking from AlansKitchen.com

Ingredients:

  • 1 - teaspoon baking soda
  • 1 - cup buttermilk
  • 1/2 - cup molasses
  • 1 - cup graham flour
  • 1 - cup stone-ground cornmeal
  • 1/2 - teaspoon salt
  • 1/2 - cup raisins

Directions:

Preheat oven to 425 F. Grease tin can.

  1. In a small mixing bowl, mix the baking soda, buttermilk, and molasses.  In a large mixing bowl, sift together the graham flour, cornmeal, and salt. 

  2. Add the buttermilk mixture and beat together.  Now add the raisins. 

  3. In a tin can that has a cover, fill it two-thirds full with the batter, cover, and steam in hot water for 2 hours.  Remove and bake for 10 to 15 minutes.
