Crullers (Fried Cakes) I

Makes 2 dozen.Pennsylvania Dutch Cooking from AlansKitchen.com

Ingredients:

Directions:

  1. Place baking soda and buttermilk in a large bowl, add sugar, and in the flour, using just enough to stiffen, add salt and eggs. 

  2. Mix into a stiff paste, roll out on a floured board, cut into shapes, and fry quickly in deep, hot fat.

  3. In a deep fryer, pour in high quality fat with a "high smoke point" and temperature at 360 F. Quickly deep-fry. 

  4. You may roll crullers in powdered sugar when cool.
