Date and Nut Bread

Makes 1 loafPennsylvania Dutch Cooking from AlansKitchen.com

Ingredients:

  • 1 - teaspoon baking soda
  • 1 - cup water, boiling
  • 1 - cup dates, chopped
  • 2 - cups all-purpose flour, sifted
  • 1/2 - teaspoon salt
  • 1 - cup walnuts, chopped
  • 1 - cup brown sugar
  • 1 - Tablespoon butter, softened
  • 1 - egg, beaten
  • 1 - teaspoon vanilla

Directions:

Preheat oven to 350 F.  Grease and flour a loaf pan.

  1. In a small bowl, dissolve the baking soda into the water and mix in the dates.  Set aside to cool.

  2. Sift the flour and salt.  Take a third of the sifted flour and add to a small bowl.   Add in the walnuts and reserve.

  3. In a large mixing bowl, cream the sugar and butter to a creamy texture.  Add in the egg.  Add the date mixture and flour alternately.

  4. Add the floured walnuts and vanilla.  Beat together and let sit for 15 minutes.

  5. Pour in batter and let sit 15 minutes.  Then bake for 60 minutes.
