Journey (Johnny) Cake

Ingredients:Pennsylvania Dutch Cooking from AlansKitchen.com

  • 2 - cups stone-ground cornmeal
  • 1/4 - cup water, boiling
  • 2 - cups milk, scalded (cooled to lukewarm
  • 1 - cup stone-ground whole-wheat flour
  • 2 - teaspoons baking powder
  • 1 - teaspoon salt
  • 3 - eggs, beaten
  • 1 - Tablespoon sugar

Directions:

  1. In a mixing bowl, add the cornmeal and add the water.  Allow cornmeal to cool. 

  2. Add the cooled milk.  Sift together the whole-wheat flour, baking powder, and salt.  .Add the eggs and sugar and mix ingredients. 

  3. Heat greased griddle until hot and bake cakes until golden brown on each side (just like pancakes).
