Raisin Bread
Makes 2 loaves.
Ingredients
- 1 - cup mashed potatoes

1 - package active dry yeast

1 - cup potato water
-
1/2 - cup scalded milk, lukewarm

1/4 - cup melted butter

1/2 - cup sugar
-
3-1/2 - cups all-purpose flour (plus), sifted

2 - eggs, beaten
-
1 - cup raisins
-
1/4 - teaspoon cloves
-
1/2 - teaspoon cinnamon
Directions
Preheat oven to 450° F.

In a mixing bowl, mix mashed potatoes,
yeast, and 1/2 cup lukewarm potato water.

Cover bowl with plastic
wrap and let rise 30 minutes.
In a separate bowl, whip butter, sugar, and cream.
- Now, add to
the mashed potato mixture, the milk and the remaining potato water,
pour in the creamed butter and sugar, flour, and eggs.
- Mix batter
well and let rise 2 hours.
Add the raisins, cloves, and cinnamon to the dough.
- Remove from
bowl to a floured board and lightly knead.
- Return to a greased bowl
and allow rising until double in size.
- Return to floured board, chop with a knife, and lightly knead.

Divide the dough into 2 parts.
- Shape into loaves and place in
greased loaf pan. Cover, set aside, and allow to double.
- Place in
oven and bake 5 minutes or loaves have begun to brown.
- Reduce heat
to 350° F and finish baking 40 to 45 minutes.
