Raisin Bread
Grandma Showalter's Pennsylvania Dutch Cooking from AlansKitchen.com Makes 2 loaves.

Ingredients

  • 1 - cup mashed potatoes
  • 1 - package active dry yeast
  • 1 - cup potato water
  • 1/2 - cup scalded milk, lukewarm
  • 1/4 - cup melted butter
  • 1/2 - cup sugar
  • 3-1/2 - cups all-purpose flour (plus), sifted
  • 2 - eggs, beaten
  • 1 - cup raisins
  • 1/4 - teaspoon cloves
  • 1/2 - teaspoon cinnamon

Directions

Preheat oven to 450° F.

  1. In a mixing bowl, mix mashed potatoes, yeast, and 1/2 cup lukewarm potato water. 
  2. Cover bowl with plastic wrap and let rise 30 minutes.
    In a separate bowl, whip butter, sugar, and cream. 
  3. Now, add to the mashed potato mixture, the milk and the remaining potato water, pour in the creamed butter and sugar, flour, and eggs. 
  4. Mix batter well and let rise 2 hours.
    Add the raisins, cloves, and cinnamon to the dough. 
  5. Remove from bowl to a floured board and lightly knead. 
  6. Return to a greased bowl and allow rising until double in size.
  7. Return to floured board, chop with a knife, and lightly knead. 
  8. Divide the dough into 2 parts. 
  9. Shape into loaves and place in greased loaf pan. Cover, set aside, and allow to double. 
  10. Place in oven and bake 5 minutes or loaves have begun to brown. 
  11. Reduce heat to 350° F and finish baking 40 to 45 minutes.
