Amish Coffee Cake
Makes 12 servings
Prep Time: 15 min.
Bake Time: 30 min.
Preheat oven to 350 F. and grease rectangle
In a large mixing bowl, mix brown sugar,
four, and shortening until just mixed. Leave is lumpy. Take out
1 cup of the sugar flour mixture and set aside for crumb toping.
Dissolve the baking soda in the hot coffee.
Add to the remaining brown sugar and flour mixture. Add the egg
and vanilla and mix (do not over mix).
Bake for 30 minutes or until brown.
Take out of oven and sprinkle with powered sugar or leave plain.
