Coffee Cake

Makes 10 servings:

Pennsylvania Dutch Cooking from AlansKitchen.comIngredients

  • 4 - eggs
  • 2 - cups sugar
  • 1 - cup molasses
  • 1 - cup butter
  • 1 - cup strong, hot coffee
  • 4-1/2 - cups flour, sifted
  • 1 - teaspoon soda
  • 1 - teaspoon cream tartar
  • 1 - teaspoon cloves
  • 1 - teaspoon cinnamon
  • 1 - teaspoon nutmeg
  • 1/2 - cup raisins, chopped

Directions

Preheat oven to 350 F. Grease & flour 9-inch loaf pans.

  1. Beat eggs, cream with sugar, stir in molasses, mix well. 
  2. Melt butter with hot coffee and add. 
  3. Sift flour, soda, cream tartar, and spices over the bowl and mix into batter. 
  4. Stir well until smooth. 
  5. Dredge raisins lightly with flour and fold in. 
  6. Pour cake batter into pan.
  7. Bake for about 60 minutes. 
  8. When cool spread with Mocha Icing if desired.
