German Nut Cake

Makes 1 large cake.Pennsylvania Dutch Cooking from AlansKitchen.com

Ingredients

  • 5 - eggs
  • 1-1/2 - cups sugar
  • 1 - cup flour
  • 1-1/2 - teaspoons baking powder
  • 1 - teaspoon allspice
  • 1 - teaspoon cloves
  • 1 - teaspoon nutmeg
  • 1 - teaspoon cinnamon
  • 1 - cup blanched almonds, chopped
  • 1 - teaspoon vanilla
  • 1/2 - teaspoon almond extract

Directions

Preheat oven to 350 F. Grease & flour large, shallow pan.

  1. Beat eggs lightly, add sugar and stir together.  Add flour, sifted with a pinch of salt, the baking powder, and the spices. 

  2. Dredge almonds in a little flour and fold in.  Add flavoring. 

  3. Pour batter into pan.  Bake and begin to raise heat gradually to 375 F. 

  4. Bake from 45 to 60 minutes.  Cool cake in the pan.  Cut into squares.
