Coconut Filling

Ingredients:Pennsylvania Dutch Cooking from AlansKitchen.com

  • 1 - cup coconut, grated
  • 1 - cup sugar
  • 1 - cup milk
  • 1 - egg yolk
  • 2 - egg whites

Directions:

  1. Heat sugar and milk together, beat egg yolk, and add with freshly grated coconut.  Simmer until mixture thickens. 

  2. Remove from stove and quickly fold in stiffly beaten egg whites.  Spread on cake at once and sprinkle thickly with more coconut.
