Mocha Cake

Pennsylvania Dutch Cooking from AlansKitchen.comIngredients

  • Cake Ingredients
    • 4 - eggs, beaten separately
    • 1 - cup confectioners� sugar
    • 1 - cup flour
    • 1/4 - teaspoon salt
    • 1 - teaspoon baking powder
    • 1/4 - cup strong coffee
  • Filling Ingredients
    • 2 - teaspoon strong coffee
    • 1 - Tablespoon confectioners� sugar
    • 1 - cup whipped cream
    • 1/2 - cup nuts, chopped

Directions

Preheat oven to 350 F. Grease & flour 2 8-inch cake pans.

  1. Beat egg yolks and blend with sifted sugar, flour, and baking powder. 
  2. Beat egg whites stiffly with salt. 
  3. Fold into batter. 
  4. Pour cake batter into cake pans.
  5. Bake for about 35 minutes.
  6. For filling, mix coffee, sugar, and whipped cream lightly together. 
  7. Add nuts. 
  8. Spread between layers and over cake and serve at once, cutting in squares.
