Mocha Cake

- 4 - eggs, beaten separately

1 - cup confectioners’ sugar

1 - cup flour

1/4 - teaspoon salt

1 - teaspoon baking powder

1/4 - cup strong coffee
- Filling Ingredients
2 - teaspoon strong coffee

1 - Tablespoon confectioners’ sugar

1 - cup whipped cream
-
1/2 - cup nuts, chopped
Directions
Preheat oven to 350° F. Grease & flour 2 8-inch cake pans.

Beat egg yolks and blend with sifted
sugar, flour, and baking powder.

Beat egg whites stiffly with salt.

Fold into batter.

Pour cake batter into cake pans.
- Bake for about 35 minutes.
- For filling, mix coffee, sugar, and whipped cream lightly
together.
- Add nuts.
- Spread between layers and over cake and serve at
once, cutting in squares.
