Mrs. Fegley's Angel Food Cake

Makes 1 large cake.

IngredientsPennsylvania Dutch Cooking from AlansKitchen.com

  • 1 - heaping cup flour
  • 1-1/2 - cups sugar
  • 1/2 - teaspoon salt
  • 11 - egg whites
  • 1-1/2 - teaspoon cream tartar
  • 1/2 - teaspoon vanilla
  • 1/2 - teaspoon almond extract

Directions

Preheat oven to 325 F.

  1. Sift flour 3 times, sugar 3 times.  Resift flour with half the sugar and the salt. 

  2. Whip egg whites on a platter with wire whisk until they are foamy.  Add cream tartar, whip until stiff. 

  3. Whip in balance of sugar a little at a time.  Fold in vanilla and almond extract. 

  4. Fold in sifted flour and sugar, a little at a time.  Pour batter into an ungreased 9-inch tube pan.

  5. Bake for about 1 hour and 10 minutes.  Take from oven and turn upside down in pan. 

  6. When cake is cool remove from pan.
