Mrs. Schill's Devil's Food Cake

Makes 1 cake.Pennsylvania Dutch Cooking from AlansKitchen.com

Ingredients

  • 1 - teaspoon baking soda dissolved in 1/2 cup sour milk
  • 2 - ounces chocolate, melted in hot water, to make 1/2 cup
  • 1/2 - cup shortening
  • 2 - cups brown sugar, loosely packed
  • 3 - egg yolks
  • 1 - teaspoon vanilla
  • 1/2 - cup hot coffee
  • 2 - cups flour, sifted

Directions

Preheat oven to 350 F. Grease & flour loaf cake pan.

  1. Mix soda and sour milk.  Melt chocolate in cup by filling cup with hot water. 

  2. Cream shortening with half the sugar.  Beat egg yolks with balance of sugar and add this to butter and sugar. 

  3. Beat well.  Stir in chocolate and hot water, vanilla and hot coffee. 

  4. Beat again.  Stir in sifted flour, alternately with sour milk. Beat for 3 minutes. 

  5. Pour batter into loaf cake pan.  Bake for about 35 minutes.
