Pudding Dish Cake

Makes 6 servings.Pennsylvania Dutch Cooking from AlansKitchen.com

Ingredients

  • 1 - pound powdered sugar
  • 1 - Tablespoon butter
  • 3 - eggs
  • 3 - cups flour
  • 3 - teaspoons baking powder
  • 1/4 - teaspoon salt
  • 1 - cup milk
  • 1 - teaspoon vanilla

Directions

Preheat oven to 350 F.  Grease & flour deep pudding dish.

  1. Cream sugar and butter, add well-beaten egg yolks.  Sift flour, baking powder, and salt, add alternately with milk. 

  2. Fold in stiffly beaten egg whites.  Add vanilla. 

  3. Pour cake batter into dish.  Bake for about 45 to 50 minutes. 

  4. May be served with custard sauce.

Custard Sauce

Ingredients

  • 2/3 - cup sugar
  • 1/3 - cup flour
  • Pinch of salt
  • 2 - cups milk, scalded
  • 2 - eggs
  • 1 - teaspoon vanilla

Directions

  1. Sift together sugar, flour and salt.  Place in bowl. 

  2. Scald milk, stir into flour and sugar, and add slightly beaten eggs. 

  3. Cook in double boiler over boiling water until sauce thickens.  Cool and add vanilla.
