Shaker Nut Cake

Makes 1 (8-inch) cake.Pennsylvania Dutch Cooking from AlansKitchen.com

Ingredients

  • 1/2 - cup butter
  • 1 - cup brown sugar
  • 2 - beaten eggs
  • 1/2 - cup water
  • 1-1/2 - cups flour, sifted
  • 1 - heaping teaspoon baking powder
  • 1/4 - teaspoon salt
  • 1 - cup hickory nuts, chopped

Directions

Preheat oven to 350 F. Grease & flour (8-inch) loaf pan.

  1. Cream butter and sugar.  Beat egg yolks and add. 

  2. Sift flour and baking powder and add alternately with water.  Beat egg whites stiffly with salt and fold in batter with chopped nuts, which have been lightly dredged with flour.

  3. Bake for about 40 minutes.  Cover with Hickory Nut Icing when cool.
