Water Sponge Cake
Pennsylvania Dutch Cooking from AlansKitchen.comMakes 1 cake

Ingredients:

  • 2 - cups flour (sifted)
  • 2 - heaping teaspoons baking powder
  • 3 - eggs
  • 1/2 - cup water
  • 2 - cups sugar
  • 1/4 - teaspoon salt
  • 2 - Tablespoons orange juice
  • 1 - teaspoon grated orange rind

Directions:

Preheat oven to 350� F.

  1. Sift flour and baking powder several times. 
  2. Stir egg yolks with water until light and thick. 
  3. Add half the sugar gradually and continue beating. 
  4. Fold in flour and baking powder. 
  5. Beat egg whites stiffly with salt and beat balance of sugar with them. 
  6. Add flavoring. 
  7. Fold this mixture into batter. 
  8. Spread in ungreased loaf pan.
  9. Bake for about 60 minutes. 
  10. Cool in pan.
