White Fruit Cake

Pennsylvania Dutch Cooking from AlansKitchen.comIngredients:

  • 1-1/2 - cup sugar
  • 1 - cup butter
  • 3 - cups flour (sifted)
  • 3 - teaspoons baking powder
  • 1 - teaspoon mace
  • 2 - Tablespoons orange juice
  • 4 - ounces white wine
  • 1 - cup white raisins
  • 1/2 - cup candied cherries
  • 1-1/2 - pounds citron (chopped)
  • 1/2 - pound blanched almonds (chopped)
  • 6 - egg whites
  • 1/4 - teaspoon salt
  • 1 - cup grated coconut

Directions:

Preheat oven to 325� F. Grease & flour loaf cake pan.

  1. Sift sugar 3 times. 
  2. Cream butter with sugar. 
  3. Sift flour 5 times and resift with baking powder and mace, adding gradually to batter with orange juice and wine.
  4. Dredge fruit and nuts lightly with flour.
  5. Fold into batter.
  6. Beat egg whites stiffly with salt, fold in.
  7. Add coconut last.
  8. Bake for about 1 hour and 15 minutes.
