Cheese Pie
Makes 1 large pie.

German Pastry

1 - cup sifted flour
1/2 - teaspoon salt
1 - Tablespoon sugar
3 - Tablespoons butter
1 - egg yolk
1 - Tablespoon lemon juice
1 - Tablespoon cold water

Cheese Filling

12 - ounces cottage cheese
1 - cup sugar
2 - rounded Tablespoons flour
1 - rounded Tablespoon butter
2 - eggs
3 - cups milk

  • Sift the flour into a bowl with the salt and sugar. 
  • Cut in the butter, stir together. 
  • Stir in the egg yolk lightly, add lemon juice and water. 
  • Chill in refrigerator for 30 minutes. 
  • Roll out on a floured board.
  • Line a deep 9 - inch pie dish with the pastry and chill again. 
  • Mix the ingredients for the filling, beating the eggs separately and adding the egg whites last. 
  • Pour into the pastry shell and bake in 350� F. oven for about 45 minutes, or until filling is firm and golden brown.
