Mrs. Hollenbach's Cheese Custard Pie (II)
Makes 1 pie.

Pastry

1 - cup flour
1/2 - teaspoon salt
2 - teaspoon sugar
4 - Tablespoons butter
2 - Tablespoons ice water
1 - Tablespoon lemon juice

Filling

1 - package cream cheese
3 - eggs, separated
Salt
1/2 - cup sugar
1 - cup milk
1/2 - cup cream

Preheat oven to 450� F.

  • Sift the flour, salt, and sugar into a bowl, cut in the butter, add ice water and lemon juice. 
  • Stir together and chill in refrigerator. 
  • Roll out the dough on a floured board, line a deep 7 - inch pie dish with pastry and chill again. 
  • In a mixing bowl, add cream cheese, egg yolks, salt, sugar, milk and cream.  
  • Beat together, adding beaten egg whites last. 
  • The mixture should just about fill the crust. 
  • Bake for 15 minutes. 
  • Lower the heat to 350� F. and finish baking for about 30 minutes.
