Filling Oatmeal Cookies

Pennsylvania Dutch Cooking from AlansKitchen.comMakes 3 dozen cookies

Prep Time: 10 min
Baking Time: 12 min
Cooking Time: 30 min

Ingredients:

  •    1 cup sugar
  •    1 cup shortening
  •    2 cups oatmeal (grind in blender)
  •    2 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup sour milk
  •        Filling (See Below)

Directions:

Preheat oven to 350� F.

1) In a mixing, cream sugar and shortening.

2) In a bowl, combine, oatmeal, flour, baking soda, and salt.

3) Add dry ingredients to creamed sugar, alternately with sour milk. Mix well.

4) Roll between a � to � inch thick on floured board.

5) Cut with round cookie cutter and place on cookie sheet.

6) Bake for 10 to 12 minutes.

Filling

Ingredients:

  • 1 cup sugar
  • 1 cup water
  • 2 cups dates (ground or finely chopped)

Directions:

1) In a saucepan, combine sugar, water, and dates.

2) Cook 20 to 30 minutes or until thickened

3) Place a spoonful of filling between 2 cookies and press firmly together.
