Date Cookies

Ingredients:Pennsylvania Dutch Cooking from AlansKitchen.com

  • 1 - cup shortening

  • 2 - cups brown sugar

  • 3 - eggs, beaten

  • 4 - cups flour

  • 1/4 - teaspoon salt

  • 1/2 - teaspoon baking soda

Filling

  • 2 1/4 - cups dates

  • 1 - cup white sugar

  • 1 - cup water

  • 1 - cup nuts

Directions:

  1. In a large mixing bowl, add shortening, brown sugar, eggs, flour, salt, and baking soda. Chill for 2 hours. Roll out and cut.

  2. Boil dates, brown sugar, and water, until thick. Add nuts. Chill.

  3. Put 1/2 to 1 teaspoon filling between cookies. Place on greased baking sheet and bake at 400 F for 30 minutes or until done.
