Aline Dillinger's Spice Cookies

Makes about 7 dozen cookies.Pennsylvania Dutch Cooking from AlansKitchen.com

Ingredients:

  •    1/2 - cup melted butter
  •    1/2 - cup brown sugar
  •       1 - cup molasses
  •    1/2 - teaspoon soda dissolved in 1 tablespoon hot water
  • 2-1/2 - cups flour, sifted
  •    1/2 - teaspoon salt
  •       1 - teaspoon cinnamon
  •       1 - teaspoon ginger
  •       1 - egg

Directions:

Preheat oven to 350 F. Grease cookie sheets.

  1. Mix melted butter, sugar, and molasses in a bowl.  Add soda in water. 

  2. Sift in flour, salt, and spices, mix well.  Stir in egg and beat for 5 minutes.  Chill in refrigerator overnight.

  3. Next day roll out very thin on floured board, cut in shapes.  Place on cookie sheets.  Bake for 10 to 15 minutes.
